  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 cup Water
  • 1 cup Vegetable oil, for frying

Instructions 

  1. 1. In a mixing bowl, combine flour, baking powder, salt, and pepper.
  2. 2. Gradually add water and whisk until smooth.
  3. 3. Fold in the diced eggplant.
  4. 4. Heat oil in a frying pan over medium heat.
  5. 5. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  6. 6. Drain on paper towels and serve hot.
