  • 1 cup Spinach chopped
  • 1 cup Bell Peppers diced
  • ½ cup Onion diced
  • ½ cup Mushrooms sliced
  • ½ cup Low-Fat Cheese shredded
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine egg whites, spinach, bell peppers, onion, mushrooms, salt, and pepper.
  3. Pour the mixture into a greased baking dish.
  4. Sprinkle shredded cheese on top.
  5. Bake for 30 minutes or until the casserole is set and the top is golden brown.
  6. Let it cool for a few minutes before serving.
