  • 2 large cucumbers thinly sliced
  • 1 teaspoon salt
  • ¼ cup rice vinegar
  • 2 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame seeds toasted

Instructions 

  1. 1. Thinly slice the cucumbers and place them in a mixing bowl.
  2. 2. Sprinkle the salt over the cucumbers and let them sit for 5 minutes.
  3. 3. In a small bowl, mix the rice vinegar, sugar, and soy sauce until the sugar dissolves.
  4. 4. Drain any excess water from the cucumbers and add the vinegar mixture. Toss to combine.
  5. 5. Sprinkle with toasted sesame seeds before serving.
