Instructions
1. In a bowl, mix flour, salt, and pepper.
2. In another bowl, beat the eggs.
3. In a third bowl, mix shredded coconut and panko breadcrumbs.
4. Dredge shrimp in flour mixture, then dip in beaten eggs, and coat with coconut mixture.
5. Heat oil in a frying pan over medium heat.
6. Fry shrimp until golden and crispy, about 2-3 minutes per side.
7. Drain on paper towels and serve hot.
