- 2 ripe avocados
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- 2 eggs beaten
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut the avocados in half, remove the pit, and slice each half into wedges.
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with salt, pepper, and garlic powder.
Coat each avocado wedge in flour, then dip in beaten eggs, and finally coat with the panko mixture.
Place the coated wedges on the prepared baking sheet and bake for 15 minutes or until golden and crispy.
Serve immediately with your favorite dipping sauce.
