- 1 pound fresh green beans trimmed
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon salt
- 1 tablespoon sugar
- 2 cloves garlic peeled
- 1 teaspoon mustard seeds
- 1 teaspoon dill seeds
- 0.5 teaspoon red pepper flakes optional
Blanch green beans in boiling water for 2 minutes. Drain and cool in ice water.
In a saucepan, combine vinegar, water, salt, and sugar. Bring to a boil, then remove from heat.
Pack green beans, garlic, mustard seeds, dill seeds, and red pepper flakes into a jar.
Pour hot vinegar mixture over beans. Seal jar and refrigerate for at least 24 hours before serving.
