Ingredients

  • 1 pound fresh green beans trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 2 cloves garlic peeled
  • 1 teaspoon mustard seeds
  • 1 teaspoon dill seeds
  • 0.5 teaspoon red pepper flakes optional

Instructions 

  1. Blanch green beans in boiling water for 2 minutes. Drain and cool in ice water.
  2. In a saucepan, combine vinegar, water, salt, and sugar. Bring to a boil, then remove from heat.
  3. Pack green beans, garlic, mustard seeds, dill seeds, and red pepper flakes into a jar.
  4. Pour hot vinegar mixture over beans. Seal jar and refrigerate for at least 24 hours before serving.
