Main Ingredients
- 2 tablespoon Butter
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 500 g Mushrooms, sliced
- 4 cups Chicken or vegetable broth
- 1 cup Heavy cream
- to taste Salt and pepper
1. Melt the butter in a large pot over medium heat.
2. Add the chopped onion and cook until soft, about 5 minutes.
3. Stir in the garlic and cook for another minute.
4. Add the sliced mushrooms and cook until they release their juices and become tender, about 10 minutes.
5. Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes.
6. Use a blender to puree the soup until smooth. Return to the pot.
7. Stir in the heavy cream and season with salt and pepper to taste. Heat through but do not boil.
8. Serve hot and enjoy!
