Cream of Fresh Asparagus Soup
A creamy, delicious soup made with fresh asparagus.

Main Ingredients
- 1 lb fresh asparagus trimmed and cut into 1-inch pieces
- 1 medium onion chopped
- 2 tablespoon butter
- 4 cups chicken broth
- 1 cup heavy cream
- to taste salt and pepper
In a pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Add the asparagus and chicken broth. Bring to a boil, then reduce heat and simmer until asparagus is tender, about 15 minutes.
Use a blender to puree the soup until smooth. Return to the pot.
Stir in the heavy cream and season with salt and pepper to taste. Heat through, but do not boil.
Serve hot.
