Ingredients

  • 1 tablespoon butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 3 cups chicken broth
  • 1 cup milk
  • Salt and pepper to taste

Instructions 

  1. Melt butter in a pot over medium heat. Add onion and garlic, cook until soft.
  2. Add broccoli and chicken broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in milk, and season with salt and pepper. Heat through, but do not boil.
