Dough
- 2 cups chicken broth
- 2 cups all-purpose flour
Filling
- 2 cups shredded chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon tomato paste
- to taste salt and pepper
Coating
- 2 cups breadcrumbs
- 2 eggs, beaten
- for frying vegetable oil
1. In a large pot, bring the chicken broth to a boil. Gradually add the flour, stirring constantly until the dough forms a ball and pulls away from the sides of the pot. Remove from heat and let it cool.
2. In a frying pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened. Add the shredded chicken and tomato paste, and cook for a few more minutes. Season with salt and pepper to taste. Set aside to cool.
3. Take a small amount of dough and flatten it in your hand. Place a spoonful of the chicken filling in the center and fold the dough around it, shaping it into a drumstick or teardrop shape. Repeat with the remaining dough and filling.
4. Dip each coxinha into the beaten eggs, then roll in breadcrumbs to coat.
5. In a large pot, heat the vegetable oil to 350°F (175°C). Fry the coxinhas in batches until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
