  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 red onion chopped
  • 2 jalapeños seeded and chopped
  • ¼ cup cilantro chopped
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large mixing bowl, combine black beans, corn, red bell pepper, green bell pepper, red onion, jalapeños, and cilantro.
  2. 2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
  3. 3. Pour the dressing over the bean mixture and toss to coat.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
