- 500 g Cooked Chicken shredded
- 100 g Mayonnaise
- 2 tablespoon Curry Powder
- 1 tablespoon Tomato Paste
- 1 tablespoon Lemon Juice
- 50 g Dried Apricots chopped
- 50 g Sliced Almonds toasted
1. In a saucepan, heat the curry powder and tomato paste for a few minutes to release the flavors.
2. In a mixing bowl, combine the mayonnaise, lemon juice, and the curry-tomato mixture.
3. Add the shredded chicken, chopped apricots, and toasted almonds. Mix well.
4. Chill in the refrigerator for at least 30 minutes before serving.
