  • 2 cups Corn kernels (fresh or canned)
  • 1 cup Diced tomatoes
  • ½ cup Chopped red onion
  • 1 Jalapeño, seeded and minced
  • ¼ cup Chopped cilantro
  • 1 Juice of lime
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. In a mixing bowl, combine corn, tomatoes, red onion, jalapeño, and cilantro.
  2. Add lime juice, salt, and black pepper. Mix well.
  3. Let it sit for 10 minutes to allow flavors to meld. Serve and enjoy!
