  • 2 cups Corn kernels (fresh, canned, or frozen)
  • 1 Avocado, diced
  • ½ cup Red onion, finely chopped
  • 1 Jalapeño, seeded and finely chopped
  • ¼ cup Cilantro, chopped
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt

Instructions 

  1. In a mixing bowl, combine corn, avocado, red onion, jalapeño, and cilantro.
  2. Add lime juice and salt. Toss gently to combine.
  3. Serve immediately or refrigerate for later.
