Ingredients 

Main Ingredients

  • 1 package refrigerated cheese tortellini 9 ounces
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion thinly sliced
  • ¼ cup Kalamata olives pitted and halved
  • ¼ cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. Cook tortellini according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine tortellini, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over salad and toss to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving.
