- 2 pounds potatoes peeled and cubed
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 cup celery chopped
- ½ cup onion chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley chopped
1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
2. In a large mixing bowl, combine the mayonnaise, mustard, celery, onion, salt, and pepper.
3. Add the cooled potatoes to the bowl and mix until well coated.
4. Garnish with fresh parsley before serving. Chill in the refrigerator for at least 1 hour before serving.
