- 2 cups cooked rice preferably day-old
- 1 cup cooked chicken diced
- 2 eggs beaten
- 1 cup mixed vegetables peas, carrots, corn
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic minced
- 1 small onion chopped
- ½ teaspoon sesame oil
- Salt and pepper to taste
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add garlic and onion, sauté until fragrant.
Add mixed vegetables and cook for 2-3 minutes.
Stir in the diced chicken and cook until heated through.
Add the cooked rice, soy sauce, and sesame oil. Stir well to combine.
Return the scrambled eggs to the skillet and mix everything together. Season with salt and pepper to taste.
Serve hot.
