Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 can diced tomatoes (14 oz)
  • 1 can kidney beans, drained and rinsed (14 oz)
  • 1 cup beef broth
  • to taste salt and pepper

Instructions 

  1. Heat oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add ground beef, cook until browned.
  3. Stir in cumin, paprika, and chili powder. Cook for 1 minute.
  4. Add tomatoes, beans, and broth. Bring to a boil.
  5. Reduce heat, simmer for 45 minutes. Season with salt and pepper.
