Chickpea Spinach Curry
A hearty and healthy chickpea spinach curry that's perfect for a quick dinner.

Main Ingredients
- 1 tablespoon Olive Oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 1 can Chickpeas, drained and rinsed
- 1 can Diced Tomatoes
- 1 cup Coconut Milk
- 4 cups Fresh Spinach
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Turmeric
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in garlic and ginger, cook for another 2 minutes.
4. Add cumin, coriander, turmeric, salt, and pepper. Stir well.
5. Add chickpeas, diced tomatoes, and coconut milk. Bring to a simmer.
6. Reduce heat and let it cook for 10 minutes.
7. Stir in fresh spinach and cook until wilted, about 2 minutes.
8. Serve hot with rice or naan.
