Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 can Chickpeas, drained and rinsed
  • 1 can Diced Tomatoes
  • 1 cup Coconut Milk
  • 4 cups Fresh Spinach
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in garlic and ginger, cook for another 2 minutes.
  4. 4. Add cumin, coriander, turmeric, salt, and pepper. Stir well.
  5. 5. Add chickpeas, diced tomatoes, and coconut milk. Bring to a simmer.
  6. 6. Reduce heat and let it cook for 10 minutes.
  7. 7. Stir in fresh spinach and cook until wilted, about 2 minutes.
  8. 8. Serve hot with rice or naan.
