Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 unit onion, diced
  • 3 cloves garlic, minced
  • 1 unit red bell pepper, diced
  • 1 unit green bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes 14.5 oz
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed 15 oz
  • 1 can corn, drained 15 oz
  • 2 cups cooked chicken, shredded
  • 1 unit lime, juiced
  • to taste salt and pepper
  • for garnish tortilla strips, avocado, cilantro, cheese

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell peppers. Cook until softened.
  2. Add chili powder, cumin, and paprika. Stir to combine.
  3. Add diced tomatoes, chicken broth, black beans, and corn. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add shredded chicken and lime juice. Season with salt and pepper to taste. Simmer for another 5 minutes.
  5. Serve hot, garnished with tortilla strips, avocado, cilantro, and cheese.
