Ingredients 

Soup Base

  • 1 whole Chicken cut into pieces
  • 2 large Carrots sliced
  • 2 stalks Celery sliced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 8 cups Chicken Broth
  • 2 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 2 teaspoon Dried Thyme
  • 2 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, add the chicken pieces and cover with water. Bring to a boil and then reduce to a simmer. Cook for 30 minutes.
  2. 2. Remove the chicken from the pot and set aside to cool. Strain the broth to remove any impurities.
  3. 3. Add the carrots, celery, onion, and garlic to the pot. Pour in the chicken broth and bring to a boil. Reduce to a simmer and cook for 15 minutes.
  4. 4. While the vegetables are cooking, remove the meat from the chicken bones and shred it into bite-sized pieces.
  5. 5. Add the shredded chicken back into the pot. Season with salt, pepper, thyme, and parsley. Simmer for another 10 minutes.
  6. 6. Serve hot and enjoy!
