Chicken Posole Recipe

Main Ingredients
- 2 lbs Chicken thighs boneless, skinless
- 1 can Hominy drained and rinsed
- 1 large Onion chopped
- 3 cloves Garlic minced
- 1 tablespoon Cumin
- 1 tablespoon Oregano
- 6 cups Chicken broth
- 2 tablespoon Olive oil
- to taste Salt and pepper
Toppings
- 1 Lime cut into wedges
- 1 cup Cabbage shredded
- 1 cup Radishes sliced
- 1 cup Cilantro chopped
1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
2. Add minced garlic, cumin, and oregano. Cook for another minute.
3. Add chicken thighs and cook until browned on all sides.
4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 30 minutes.
5. Add hominy and continue to simmer for another 20 minutes.
6. Season with salt and pepper to taste.
7. Serve hot with lime wedges, shredded cabbage, sliced radishes, and chopped cilantro as toppings.
