Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices ciabatta bread
  • 4 tablespoons pesto sauce
  • 4 slices mozzarella cheese
  • 1 tomato, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a pan over medium heat. Cook chicken breasts until fully cooked, about 5-7 minutes per side. Let cool, then slice thinly.
  3. Spread pesto sauce on one side of each slice of ciabatta bread.
  4. Layer sliced chicken, mozzarella cheese, and tomato slices on two slices of bread. Top with remaining bread slices, pesto side down.
  5. Heat a panini press or skillet over medium heat. Cook sandwiches until bread is golden and cheese is melted, about 3-4 minutes per side.
