Ingredients 

Main Ingredients

  • 4 Chicken breasts, pounded thin
  • 1 cup All-purpose flour
  • 2 Eggs, beaten
  • 2 cups Breadcrumbs
  • 1 cup Vegetable oil, for frying
  • 4 Bolillo rolls, sliced
  • 1 cup Refried beans
  • 1 cup Shredded lettuce
  • 1 cup Sliced tomatoes
  • 1 cup Sliced avocado
  • 1 cup Pickled jalapeños

Instructions 

  1. 1. Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
  2. 2. Dredge each chicken breast in flour, then dip in eggs, and coat with breadcrumbs.
  3. 3. Heat oil in a frying pan over medium heat. Fry chicken until golden and cooked through, about 3-4 minutes per side.
  4. 4. Spread refried beans on the bottom half of each roll. Place a fried chicken breast on top.
  5. 5. Top with lettuce, tomatoes, avocado, and pickled jalapeños. Cover with the top half of the roll.
  6. 6. Serve immediately and enjoy!
