Ingredients

  • 1 lb chicken livers trimmed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • ½ cup butter divided
  • ¼ cup heavy cream
  • 2 tablespoon brandy
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg ground

Instructions 

  1. 1. In a skillet, melt half of the butter over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. 2. Add the chicken livers to the skillet and cook until browned on the outside but still slightly pink inside.
  3. 3. Pour in the brandy and cook for another minute. Remove from heat and let cool slightly.
  4. 4. Transfer the mixture to a blender. Add the remaining butter, heavy cream, salt, pepper, and nutmeg. Blend until smooth.
  5. 5. Push the mixture through a sieve into a bowl to ensure a smooth texture. Transfer to a serving dish and chill in the refrigerator for at least 2 hours before serving.
