Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 lb Chicken Breast, cooked and shredded
  • 4 cups Chicken Broth
  • 1 cup Enchilada Sauce
  • 1 cup Corn Kernels
  • 1 cup Black Beans, drained and rinsed
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until softened.
  3. Add shredded chicken, chicken broth, and enchilada sauce. Stir well.
  4. Add corn, black beans, cumin, chili powder, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes. Serve hot.
