Chicken Arroz Caldo Recipe
A comforting Filipino rice porridge with chicken, ginger, and garlic.

Main Ingredients
- 1 cup glutinous rice
- 6 cups chicken broth
- 1 lb chicken thighs cut into pieces
- 1 onion chopped
- 4 cloves garlic minced
- 1 thumb-sized piece ginger julienned
- 2 tablespoon fish sauce
- 1 lemon cut into wedges
- to taste salt and pepper
- 2 stalks green onions chopped, for garnish
- ¼ cup fried garlic for garnish
1. In a large pot, heat some oil over medium heat. Sauté the onion, garlic, and ginger until fragrant.
2. Add the chicken pieces and cook until they are no longer pink.
3. Stir in the fish sauce and cook for another 2 minutes.
4. Add the rice and stir to coat it with the aromatics and chicken.
5. Pour in the chicken broth and bring to a boil. Lower the heat and let it simmer, stirring occasionally, until the rice is cooked and the mixture has thickened, about 30-40 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with green onions, fried garlic, and lemon wedges on the side.
