Ingredients

  • 1 lb chicken breast diced
  • 1 cup wild rice
  • 1 onion chopped
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions 

  1. In a large pot, sauté onion, carrots, celery, and garlic until tender.
  2. Add chicken and cook until browned.
  3. Stir in wild rice, chicken broth, water, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Stir in heavy cream and cook for an additional 5 minutes.
