Ingredients 

Main Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 cup Rice
  • 4 cups Chicken Broth
  • 1 Onion diced
  • 2 Carrots sliced
  • 2 Celery Stalks sliced
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the diced onion, sliced carrots, and celery. Cook until softened.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Add the chicken pieces and cook until they are no longer pink.
  4. 4. Pour in the chicken broth and bring to a boil.
  5. 5. Add the rice, salt, pepper, and thyme. Reduce heat and let it simmer until the rice is cooked and the chicken is tender.
  6. 6. Adjust seasoning if needed and serve hot.
