Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 2 cups Corn kernels fresh or frozen
  • 1 cup Diced potatoes
  • 1 cup Diced onion
  • 3 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose flour
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the diced onion and cook until translucent.
  2. 2. Stir in the flour and cook for 1-2 minutes to form a roux.
  3. 3. Gradually add the chicken broth, stirring constantly until the mixture thickens.
  4. 4. Add the diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender, about 10-15 minutes.
  5. 5. Stir in the corn, shredded chicken, and heavy cream. Cook until heated through.
  6. 6. Season with salt and pepper to taste. Serve hot.
