  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup packed brown sugar
  • 0.25 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups sweetened shredded coconut

Instructions 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat butter and sugars until creamy. Add egg and vanilla; beat well.
  4. Gradually add flour mixture; mix until just combined. Stir in coconut.
  5. Drop dough by rounded tablespoons onto prepared baking sheets.
  6. Bake 8-10 minutes or until edges are golden. Cool on wire racks.
