- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1 cup diced onions
- 1 cup diced pickles
- 12 pieces egg roll wrappers
- 1 cup vegetable oil for frying
1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
2. Add diced onions to the skillet and cook until translucent.
3. Remove from heat and stir in shredded cheddar cheese and diced pickles.
4. Place about 2 tablespoons of the beef mixture in the center of each egg roll wrapper. Fold the sides and roll up tightly, sealing the edges with a bit of water.
5. Heat vegetable oil in a skillet over medium-high heat. Fry the egg rolls until golden brown, about 2-3 minutes per side.
6. Remove from oil and drain on paper towels. Serve hot.
