Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 can diced tomatoes (400g)
  • 4 eggs
  • to taste salt and pepper
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and red bell pepper. Cook until softened, about 5 minutes.
  2. Add minced garlic, ground cumin, paprika, and ground coriander. Cook for another 2 minutes.
  3. Add diced tomatoes and simmer for 10 minutes until the sauce thickens.
  4. Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook until the eggs are set, about 5-7 minutes.
  5. Season with salt and pepper to taste. Garnish with chopped parsley and serve hot.
