Ingredients 

Main Ingredients

  • 1 kg Carrots peeled and chopped
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Heat a large pot over medium heat and add a bit of oil.
  2. 2. Add the chopped onions and cook until translucent.
  3. 3. Add the minced garlic and cook for another minute.
  4. 4. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Stir in the coconut milk and season with salt and pepper to taste.
  7. 7. Serve hot.
