Ingredients

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1 cup Shredded coconut
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Coconut milk
  • ½ cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 2 Eggs

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine flour, sugar, shredded coconut, baking powder, and salt.
  3. In another bowl, whisk together coconut milk, vegetable oil, vanilla extract, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
