- 2 cups yellow split peas rinsed and drained
- 1 large onion chopped
- 2 medium carrots chopped
- 2 stalks celery chopped
- 1 pound ham diced
- 8 cups water
- 1 teaspoon dried thyme
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
1. In a large pot, combine the yellow split peas, onion, carrots, celery, ham, water, and thyme.
2. Bring to a boil, then reduce heat to low and simmer for about 1.5 hours, or until the peas are tender.
3. Season with salt and black pepper to taste. Serve hot.
