Ingredients 

Main Ingredients

  • 2 lbs beef shank, bone-in
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 2 ears corn, cut into thirds
  • 3 carrots, cut into chunks
  • 3 potatoes, cut into chunks
  • 1 chayote squash, cut into chunks
  • 0.5 head cabbage, cut into wedges
  • 0.5 cup cilantro, chopped
  • to taste Salt and pepper
  • 8 cups water

Instructions 

  1. In a large pot, add beef shank, onion, garlic, and water. Bring to a boil.
  2. Reduce heat, cover, and simmer for 1.5 hours.
  3. Add corn, carrots, potatoes, and chayote. Cook for another 30 minutes.
  4. Add cabbage and cilantro. Cook for 10 more minutes.
  5. Season with salt and pepper to taste.
