Ingredients 

Main Ingredients

  • 1 lb Chicken thighs, boneless and skinless cut into bite-sized pieces
  • 1 lb Andouille sausage sliced
  • ½ cup Vegetable oil
  • ½ cup All-purpose flour
  • 1 Large onion chopped
  • 1 Green bell pepper chopped
  • 2 Celery stalks chopped
  • 4 cloves Garlic minced
  • 6 cups Chicken broth
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon Dried thyme
  • 2 Bay leaves
  • 1 cup Okra sliced
  • 1 cup Green onions chopped
  • ¼ cup Fresh parsley chopped
  • to taste Salt and pepper
  • 6 cups Cooked white rice for serving

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Gradually whisk in the flour to make a roux. Stir constantly until the roux is a dark brown color, about 15-20 minutes.
  2. 2. Add the chopped onion, bell pepper, and celery to the roux. Cook until the vegetables are tender, about 5 minutes. Add the garlic and cook for another minute.
  3. 3. Slowly stir in the chicken broth, making sure there are no lumps. Add the chicken, sausage, Cajun seasoning, thyme, and bay leaves. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  4. 4. Add the okra and cook for another 10 minutes. Stir in the green onions and parsley. Season with salt and pepper to taste.
  5. 5. Serve the gumbo over cooked white rice.
