Ingredients 

Main Ingredients

  • 2 cups sushi rice, cooked
  • ¼ cup rice vinegar
  • ½ lb cooked chicken breast, shredded
  • ¼ cup buffalo sauce
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 4 sheets nori (seaweed)
  • ¼ cup blue cheese, crumbled
  • Soy sauce for serving

Instructions 

  1. Mix the cooked sushi rice with rice vinegar and let it cool.
  2. Combine shredded chicken with buffalo sauce in a bowl.
  3. Place a sheet of nori on the sushi mat.
  4. Spread an even layer of sushi rice over the nori.
  5. Add a line of buffalo chicken, avocado slices, cucumber, and blue cheese.
  6. Roll the sushi tightly using the mat.
  7. Slice the roll into bite-sized pieces.
  8. Serve with soy sauce.
