Ingredients 

Main Ingredients

  • 1.5 cups peanut butter
  • 0.5 cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 6 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening

Instructions 

  1. In a large mixing bowl, combine peanut butter, butter, and vanilla extract. Gradually add powdered sugar, beating until mixture holds together.
  2. Shape into 1-inch balls and place on a baking sheet lined with wax paper. Insert a toothpick into each ball. Chill in the freezer until firm, about 30 minutes.
  3. In a double boiler or microwave, melt chocolate chips and shortening together until smooth.
  4. Dip frozen peanut butter balls into the chocolate, leaving a small portion of peanut butter showing at the top. Return to the baking sheet and refrigerate until chocolate is set.
