Ingredients 

Brine Ingredients

  • 4 cups water
  • 1 cup kosher salt
  • 1 cup brown sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon juniper berries
  • 2 pieces bay leaves
  • 1 cup soy sauce
  • 1 cup white wine

Instructions 

  1. Combine all ingredients in a large bowl.
  2. Stir until salt and sugar are completely dissolved.
  3. Submerge salmon in the brine.
  4. Cover and refrigerate for 8-12 hours.
  5. Remove salmon from brine, rinse, and pat dry.
