Brine for Smoked Salmon Recipe
A simple and effective brine for preparing smoked salmon.

Brine Ingredients
- 4 cups water
- 1 cup kosher salt
- 1 cup brown sugar
- 1 tablespoon black peppercorns
- 1 tablespoon juniper berries
- 2 pieces bay leaves
- 1 cup soy sauce
- 1 cup white wine
Combine all ingredients in a large bowl.
Stir until salt and sugar are completely dissolved.
Submerge salmon in the brine.
Cover and refrigerate for 8-12 hours.
Remove salmon from brine, rinse, and pat dry.
