  • 2 large flour tortillas
  • 4 large eggs beaten
  • ½ cup shredded cheese cheddar or your choice
  • ¼ cup salsa
  • 1 tablespoon butter

Instructions 

  1. 1. Heat the skillet over medium heat and melt the butter.
  2. 2. Pour the beaten eggs into the skillet and scramble until fully cooked.
  3. 3. Remove the eggs and set aside.
  4. 4. Place one tortilla in the skillet, sprinkle half the cheese, add the scrambled eggs, salsa, and the remaining cheese. Top with the second tortilla.
  5. 5. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and the cheese is melted.
  6. 6. Remove from skillet, cut into wedges, and serve hot.
