  • 1 cup milk
  • ½ cup vegetable oil
  • 1 teaspoon salt
  • 2 cups tapioca flour
  • 1 cup grated Parmesan cheese
  • 2 eggs

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, combine milk, oil, and salt. Bring to a boil over medium heat.
  3. Remove from heat and add tapioca flour. Mix well until smooth.
  4. Let the mixture cool for a few minutes, then add the cheese and eggs. Mix until well combined.
  5. Pour the batter into a greased muffin tin, filling each cup about ¾ full.
  6. Bake for 15-20 minutes, or until the tops are lightly golden.
  7. Serve warm and enjoy!
