Ingredients 

Main Ingredients

  • 1 lb Boudin Sausage cooked and crumbled
  • 1 cup Breadcrumbs
  • 2 Eggs beaten
  • 1 cup Flour
  • 1 teaspoon Cajun Seasoning
  • 1 quart Vegetable Oil for frying

Instructions 

  1. Heat the oil in a deep fryer to 350°F (175°C).
  2. In a mixing bowl, combine the crumbled boudin sausage and Cajun seasoning.
  3. Form the mixture into balls about the size of a golf ball.
  4. Roll each ball in flour, dip in beaten eggs, and then coat with breadcrumbs.
  5. Fry the balls in batches until golden brown, about 3-4 minutes per batch.
  6. Drain on paper towels and serve hot.
