Ingredients 

Main Ingredients

  • 1 cup Black beans cooked
  • 1 cup Rice uncooked
  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 cup Vegetable broth
  • 1 cup Water

Instructions 

  1. Heat the olive oil in a pan over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Add the rice and stir to coat with the oil.
  5. Add the vegetable broth, water, cumin, and salt. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked.
  7. Stir in the cooked black beans and heat through.
  8. Serve warm.
