Ingredients

  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup shredded cheese cheddar or Mexican blend
  • 8 pieces flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 pinch salt to taste

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the black beans, corn, ground cumin, chili powder, and salt. Cook for 5 minutes, stirring occasionally.
  3. 3. Remove the mixture from the skillet and set aside.
  4. 4. Place a tortilla in the skillet, sprinkle with cheese, and add the black bean and corn mixture. Top with another tortilla.
  5. 5. Cook for 2-3 minutes on each side, until the cheese is melted and the tortillas are golden brown.
  6. 6. Repeat with the remaining tortillas and filling.
  7. 7. Cut into wedges and serve warm.
