Main Ingredients
- 2 lbs Beef Chuck Roast cut into chunks
- 4 cups Beef Broth
- 2 Dried Guajillo Chiles seeded and stemmed
- 2 Dried Ancho Chiles seeded and stemmed
- 1 Onion quartered
- 4 cloves Garlic peeled
- 1 teaspoon Cumin
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 12 Corn Tortillas
- 2 cups Shredded Cheese like Oaxaca or Mozzarella
- 1 cup Chopped Cilantro
- 1 cup Diced Onion
1. In a large pot, add beef, broth, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 3 hours, until beef is tender.
2. Remove beef and shred it. Strain the broth and reserve.
3. Heat a skillet over medium heat. Dip tortillas in the reserved broth, then place in the skillet. Add shredded beef and cheese to one side of the tortilla. Fold and cook until crispy and cheese is melted.
4. Serve tacos with chopped cilantro and diced onion.
