- 1 large Cucumber peeled and grated
- 8 oz Cream cheese softened
- 2 tablespoon Grated onion
- 1 teaspoon Salt
- 1 dash Green food coloring optional
1. Peel and grate the cucumber. Squeeze out excess moisture.
2. In a food processor, combine cucumber, cream cheese, grated onion, and salt. Blend until smooth.
3. Add a dash of green food coloring if desired. Mix well.
4. Transfer to a mixing bowl and refrigerate for at least 1 hour before serving.
