Main Ingredients
- 2 ¼ teaspoon active dry yeast
- 1 ½ cups warm water 110°F
- ½ cups granulated sugar
- 2 units large eggs beaten
- 1 cup evaporated milk
- 7 cups all-purpose flour divided
- ¼ cups shortening melted
- 1 teaspoon salt
- 1 unit vegetable oil for frying
- 1 cup powdered sugar for dusting
1. In a large bowl, dissolve yeast in warm water. Add sugar, eggs, and evaporated milk. Mix well.
2. Stir in 4 cups of flour and beat until smooth. Add melted shortening and salt. Gradually add remaining flour to form a soft dough.
3. Cover and let rise in a warm place until doubled, about 1 hour.
4. Punch dough down. Roll out on a floured surface to ¼-inch thickness. Cut into 2-inch squares.
5. In a deep fryer, heat oil to 375°F. Fry beignets until golden brown, about 2-3 minutes per side. Drain on paper towels.
6. Dust with powdered sugar and serve warm.
