Beet Soup Recipe

Main Ingredients
- 4 cups Beets, peeled and diced
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable broth
- 1 tablespoon Olive oil
- to taste Salt and pepper
- 1 tablespoon Lemon juice
1. Heat olive oil in a pot over medium heat.
2. Add onions and garlic, sauté until soft.
3. Add beets and vegetable broth. Bring to a boil.
4. Reduce heat and simmer for 30-35 minutes, until beets are tender.
5. Use a blender to puree the soup until smooth.
6. Add lemon juice, salt, and pepper to taste. Serve warm.
