Ingredients 

Main Ingredients

  • 4 cups Beets, peeled and diced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 tablespoon Olive oil
  • to taste Salt and pepper
  • 1 tablespoon Lemon juice

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add onions and garlic, sauté until soft.
  3. 3. Add beets and vegetable broth. Bring to a boil.
  4. 4. Reduce heat and simmer for 30-35 minutes, until beets are tender.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Add lemon juice, salt, and pepper to taste. Serve warm.
